The restaurants at some of Las Vegas’ best resorts reflect what people are eating now.

A glimpse:

Estiatorio Milos: Chef Costas Spiliadis oversees this branch of the New York restaurant specializing in Greek seafood with an emphasis on the most exquisite fresh fish.

Julian Serrano restaurant: The chic steakhouse from New York’s meatpacking district has opened a sister property here with the same cool vibe that has made it a favorite of guys who like their beef and women who like to party with them and nibble on mini wagyu burgers. It’s a slick space with a great soundtrack.

Union: Another import with a clever sushi and sashimi menu divided into two sections, Pacific and Atlantic.

Comme Ca: From Los Angeles chef David Myers is a modern brasserie with straight-ahead Parisian classics such as French onion soup, moules frites, skate in brown butter, duck confit and profiteroles.

Holsteins: Gwyneth Paltrow took her kids here for burgers and shakes. The casual burger joint features expert burgers, a variety of sliders, hot dogs and sausages, and indulgent shakes. Go ahead, top your burger with lobster, foie gras or duck confit.

Scarpetta: From New York chef Scott Conant comes a high-end Italian menu of house-made pasta, branzino with caramelized endive, pancetta-wrapped veal with sweetbreads, tuna and preserved truffles with polenta and what has to be the world’s best spaghetti with tomato sauce.

Fleur de Lys Restaurant: Casual restaurant and espresso bar features French cooking plus hamburgers, pizza, fresh pastas, sandwiches, artisan salumi and cheese, and roasted entrees including chicken, short ribs, pork chops, fish and ribeye steaks for two. Wine comes in vessels of three sizes for sharing.
