Nigerian jollof rice (also called party jollof rice)  is the most popular rice dish in the nation, and a favorite all over West Africa. Some suspect it may be the origin of the Cajun dish jambalaya. Jollof rice is a simple, spicy one-pot dish comprising, at its most basic,  rice, tomatoes, onions and pepper. It is often served at parties and festive gatherings, along with other Nigerian favorites such as egusi soup, which is made with ground melon seeds and bitter leaf; fried plantains; and pounded yam, known as iyan or fufu.

Despite the negative stereotypes against African-Americans propagated by minstrel shows, fried chicken is a staple of Southern cuisine in the U.S. It is positively associated with soul food, a variety of Southern cooking popular in African-American culture.The recipe calls for sections of broiler chickens, which have been floured or battered, to be pan-fried, deep fried, or pressure fried. The seasoned breading adds a crisp coating or crust to the exterior.

Scottish immigrants are credited with introducing the dish to the United States, but when enslaved Africans who worked as cooks were brought into the country, they enriched the flavor, using seasonings and spices not found in most Scottish cooking.

Fried chicken is most often served with black-eyed peas, greens (such as collard, mustard, turnip, or poke salad), mashed potatoes, cornbread and sweet tea.
