    Chocolate Chocolate Chip Candy Cane Cookies

    Has Christmas snuck up on you as much as it has on me? Yeah, I thought so. I may not have stuffed any stockings yet nor roasted any chestnuts, but I do have a delicious Christmas cookie recipe that is perfect for the holiday.

    To me, there’s nothing better than a great cookie. That means different things to different people: some people like soft and cakey, while others are fans of thin and crispy. My ideal cookie, on the other hand, is all about a great chew. This recipe certainly fits the bill.

    This chocolate cookie is studded with chocolate chips and crushed candy canes to lend the perfect amount of minty goodness to the cookies (reminiscent of my favorite Girl Scout flavor). Not only do the crushed candy canes add a nice mint complement to the chocolate—and a lovely dose of holiday cheer—but the melted candies add a nice decorative touch.

    I’ve made lots of cookies in my life, but this most recent experience actually taught me a new lesson. I made the first batch by just using a standard cookie scoop—they were a little irregularly shaped and I wanted them to look just right for the photos. With my second round, I rolled the balls of cookie dough with my hands after using the cookie scoop. Doing so led to a much smoother texture and a better overall appearance. Needless to say, I’ll be doing this with all of my cookies moving forward.

    These cookies are perfect for your next cookie swap, as a last minute treat for your loved ones, or to be left next to the tree with a glass of milk for Black Santa.

    Instructions
    1. Preheat the oven to 350˚F.
    2. Add the butter and both sugars to the bowl of a stand mixer fitted with a paddle attachment; cream together on high speed until perfectly smooth and homogenous, about 3 minutes. (You can also use an electric mixer or get a workout for your biceps.) Add the egg and vanilla and mix until smooth. Lower the speed and add the flour, cocoa powder, baking powder, and salt to form the cookie dough. Mix in the chocolate chips and crushed candies.
    3. Scoop the cookie dough, roll with your hands, place onto a cookie sheet (preferably lined with parchment paper) and bake until the cookies have spread and the tops have puffed up, 10 to 12 minutes. Allow the cookies to cool for a couple of minutes on the baking sheet before transferring to a wire rack to cool completely. (The cookies will deflate as they cool.)
