    Cauliflower gets a bad rap because of its moderate flavor profile, but in reality it’s a low carb alternative to potatoes and rice that meshes well with other flavors. It can be enhanced with rich sauces or zesty spices and served as a side, main dish or appetizer. In this fried cauliflower florets recipe, the cauliflower is seasoned with a mild jerk spice mix and fried in a beer batter mix. The jerk seasonings provide a pungent, and fragrant flavor owing to the allspice, cinnamon, and nutmeg.

    The jerk spice provides the primary flavor, but the batter creates additional depth and as an extra gives the florets that sexy caramel brown color and light crispy texture. The type of beer used is extremely important. Though all beers because of the carbon dioxide present keep the batter light and airy creating a light crunchy exterior with a moist, juicy center they deliver different taste profiles. Red Stripe beer provides a clean and crisp finish with that nutty bit of caramel flavor at the end.

    Instructions
    For the Cauliflower
    1. Bring large pot of salted water to boil. Boil cauliflower florets for 5 minutes or until tender. Drain, pat dry and set aside.
    2. Heat peanut oil in a cast iron skillet or deep fryer at 350 degrees. 

    3. Season the cauliflower with jerk spice then dip into beer batter mix. Let the excess batter drip off then fry in the skillet/fryer about 2-3 minutes. Florets should be golden brown. Remove with florets with slotted spoon and place on a tray or plate lined with paper towels to drain.
    4. Sprinkle with additional jerk spice if desired and serve as is or with a dip of your choice.
    For the Beer Batter
    1. Combine the beer, water, lime juice, soy sauce, jerk spice in a bowl.
    2. Combine the flour, cornstarch and baking powder in another bowl. Add the beer mixture and stir well. Cover the bater then refrigerate at least 30 minutes before using.
